Vitis Vinifera

The wine vine (vitis vinifera) was originally a plant that grew spontaneously, providing sweet fruits that primitive man enjoyed. With the development of farming, the cultivation of cereal crops became widespread. These cereals were preserved for future use in pits sunk into the ground, a solution wich could not be used for grapes. No doubt, grapes were dried in the sun but our ancesters also discovered fermentation, probably from naturally occuring yeasts on grapes. Vines were then cultivated to create a drink that gave cheer, relaxation and, some believed, an insight into other relms. Wine has been produced in the Italian Peninsular for thousands of years
With the passing of the centuries, viticulture increased steadily, until in the second half of the nineteeth century, in Europe, there was an almost total destruction of the vineyards, by the scourge phylloxer(louse) imported from North America. The insect feeds on the roots of the vine causing its slow death. A solution was found by grafting the root of an American vine onto the European stock.The problem had been solved, but many believed that something had been lost from the flavour and taste of the wine that the new vines produced.

The organic farm “DI VIRGILIO” is aware of the risks but is determined to recreate wine from the original ungrafted vine to produce a drinking experience, unknown to most wine drinkers and one that is sure to arouse new sensations on the palate of the attentive consumer.  To this end, we have planted vines called  PRINCIPIUM, plants bred without the American graft, (the complete vine as it was before phylloxera and known as the Ungrafted Vine)

The wine Pecorino is obtained from autochthonous, or native, vines cultivated in Abruzzo since 1800. They produce grapes that provide us with a wine whose qualities truely need to be appreciated. The Pecorino wine has an extraordinary balance between acidity and alcohol that enhances the drinking experience and allows it to have a greater longevity. The grapes are organically cultivated with respect for the environment and human health. They are harvested by hand from Ungrafted Vines that provide us with a taste from history. They are promptly crushed, subjected to the low temperatures of cyro-maceration to help break down the structure of the grapes and release more flavour and then pressed softly. Alcoholic fermentation is spontaneous at controlled temperatures. The wine display a pale straw-yellow color and greenish reflections. It has unusual, original and enveloping aromas. It is remarkedly fresh on the palate and is warming when swallowed.

It goes well with fish dishes, white risottos, white meats, blue cheeses. Excellent also during meals and as an aperitif. Serve at 10/12C.
