The harvesting of wine grapes takes place during the growing season. When the sweetness level in grapes stabilizes for a few days it is time to pick them up.

Sometimes Di Virgilio  Organic farm business  modifies, if necessary, the dates of the grape harvest: it can be brought forward to get wines high in acidity and more resistant to oxidation; it can also be pushed forward to get high alcohol wines or special wines.

We only use the traditional method of picking grapes by hand. Our expert grape-pickers select, pick-up only the best bunches of grapes. Then they are immediately transported to the winery where they are crushed and poured into open fermentation tanks.
