The grape harvest.
The general rule that determines the time to harvest
the grapes is very simple and intuitive and is
based on the progressive increase of the sugar
content in the grapes. When the sugar content
reaches it's peak and the gradation remains constant
for a few days, this is the moment to harvest.
A change in the timing of the harvest of wine
grapes can be due to oenological necessities;
for example, the harvest is anticipated to obtain
wines with elevated acidity and resistant to oxidation
while, it is delayed to obtain a wine with a high
alcoholic grade or special wines. The harvesting
of grapes manually has not undergone any substantial
modifications through time and still today harvesting
is done by hand. The bunches are cut with common
pruning scissors and placed in various containers.
The grapes are then brought to the cellar to be
pressed and made into wine. |
